5 ingredient Sausage Casserole
Ingredients- Serves 3-4
Large sweet potatoes x 2
Peppers x 2
Pack of quality sausages x 1
Tin of kidney beans x 1
Tin of chopped tomatoes x 1
Preheat the oven to 180 degrees.
Chop up the sweet potatoes into cubes and the peppers into strips and place them onto a baking tray.
Cut the sausages in half, remove the skin and mould each half into a meatball. Place these on the baking tray with the vegetables. Drizzle with oil and season, then place the tray in the oven for 40 minutes.
After 35 minutes has passed, crack open the chopped tomatoes and kidney beans, pour into a large pan and heat these on the hob, stirring gently.
Once the 40 minutes is over, add all the vegetables and sausage into the pan and give everything a good mix until it’s piping hot.
Now serve the casserole and enjoy.
