5-a-day Gnocchi

Alternatively known as 5-minute Gnocchi- a quick and easy dish that can make any supper special.
Serves 2-3
Ingredients
500g pack gnocchi
1 jar of red pesto
1 large pepper
1 pack of asparagus tips
100g peas
200g green beans
1 small jar of sundried tomatoes
1 clove of garlic
Parmesan to serve
Crush the garlic clove. Add a splash of olive oil and the garlic to a frying pan and cook on a low heat.
Chop the pepper into one cm cubes and slice up the asparagus tips into thirds.
Add the pepper, asparagus, green beans and peas into the frying pan when the garlic pieces are golden in colour.
Meanwhile, poach the gnocchi in a pan of lightly salted water for 4 minutes.
Strain the gnocchi and add it all into the frying pan of vegetables.
After frying the gnocchi and vegetables for a further 3 minutes, take the pan off the heat and add the red pesto and sundried tomatoes.
Give it a good stir, dish out and serve with a sprinkling of parmesan on top.

Tip- As seen in the photo, I paired my gnocchi with some salmon for an omega-3 kick during my exams.
